Pecker Gnats
Over the years, these are a common issue within the Hospitality & Beverage setting. Most commonly I will see what the night shift leaves for the openers. Always a fued lol! The closing shift is critical, as it becomes unoccupied the pests come out. The most common things will help minimize them…
Trash bags & recyclables should be closed off. Put the lid on trash bag or tying the bag and leaving it in the can, if it not full. Recyclables like cans can be sealed off by tying the bag. Bottles (even empty booze bottles) are best in a container you can lid or seal. Some people use a tote under the bar for used bottles, also helps with ordering more booze, at the same time it seals off the Pecker Gnats.
Fruit slices remaining in the drain. Not good for the drain clogging situation for one, use the excess amount of straws to help you clear the drain. The Pecker Gnats love the the drainlines and hangout and breed there, and fruit will attract them. Overnight you can put the drain cover over the drains, saran wrap the soda (gun, etc…)& draft driptray area. Some also put the plastic shot glasses upside down covering the drains instead of saran.
Important cleaning areas: Soda syrup, gun, holster with drain, draft driptray area and free of any fruit or obstacles (straws). Mixing/shaking areas where liquid sweets will attract. Also, dont forget if some plumbing dont get used, flush the toilets and sinks, just to clear everything beyond the P Trap. The bartop is important too, as the swill from shots and mixed drinks end up onto the bartop drying into a sticky mess. Plus that’s evidence lol!
